My version of freezer cooking

I have read lots about freezer cooking or once a month cooking (aka OAMC).  I went to a place a few times about 4 years ago called My Girlfriend’s Kitchen that specialized in OAMC.   (The location near us closed about 2 years ago.)  It was a neat place, they had a menu for a month and you got to pick how many total entrees you wanted to make (usually 6 or 12) and then if you wanted full portions or half portions.  The thing I liked best about it was that everything was set up in stations and they had all of the supplies you needed right there.  If the recipe called for diced chicken there was a container there with diced chicken.  The concept was great.  The food was good, but not as good as “home cooking”.  I picked up some tips from going there a few times and from reading numerous articles on the subject and decided I could do the same thing at home with recipes that we like.

So, how did I apply this concept to my everyday cooking and food prep?  Well, one of the easiest ones is that if I buy a piece of meat , like a london broil, that I end up having to freeze I make the marinade for the meat in advance and put it in the freezer bag with the meat.  That way when the meat thaws the marinade thaws with it in the refrigerator.  I learned that sometimes there are steps that you just can’t do ahead of time.  If I plan to make a stir fry for dinner I can freeze the meat and the vegetables, but I need to make sure I have rice in the pantry to finish off the meal.  This also ties into the another concept freeze individual components of your meal such as the meat in one freezer bag and the vegetables in another freezer bag. 

One of the biggest challenges of freezer cooking is knowing when to pull out the dishes to thaw them.  I learned that a casserole or pasta dish usually takes 24-48 hours to really thaw out.  That of course requires some planning on my part, but knowing is half the battle! :)

I have learned to prep some items and have them ready to grab to put together a quick dinner.  I bought a 3-lb bag of onions about 2 months ago.  I diced the entire bag (with the help of my food processor) and put about 1/2 cup portions in individual baggies that I wrapped in foil (to keep the rest of the freezer from smelling like onions) and them put the entire batch in a large freezer bag.  I also freeze uncooked meats, like ground beef or chicken breasts, in package sizes that my family generally eats, so about 1 pound each.  I can easily go to my freezer and pull out a bag of chopped onions and a pound of ground beef from the freezer and have dinner started in a few minutes. 

One way that I keep my freezer stocked with freezer meals is by cooking double and freezing half.  I did just this last week when we had taco night.  I had a two pound package of ground beef.  I browned up the entire package and added two seasoning packets to the ground beef and froze half of the meat for another time.

It doesn’t take that long to make a recipe or two for the freezer especially if you don’t have to bake the dish or if you can utilize your crock pot.  I spent about an hour (if that long) Friday afternoon making baked ziti that I was able to freeze in disposable pans that came out to 3 meals for our family.  In that time I also chopped up 2.5 pounds of chicken that I cooked in the crock pot with barbeque sauce for chicken barbeque that I divided into two meal portions in a freezer bag.  I now have 5 meals in the freezer that I can either share with someone or enjoy on a night that I don’t want to cook – all in about one hour.

I do want to share one last thing, this is along the lines of food safety.  When I make dishes like baked ziti or the chicken barbeque that are still hot when I finish them I put them in the refrigerator for a while to cool before I put them in the freezer.  I don’t want the hot dishes to soften up my precious ice cream.  :)

Free Snuggle this week at MARTIN’S

I just glanced at the on-line version of the MARTIN’S ad and noticed that they have Snuggle Liquid (32 oz) or Sheets (70 ct) on sale for $2.99 each.  If you combine this with the $3 coupon from the 3/28 RP you get FREE fabric softener!

I am optimistic that I may find some more free or cheap inexpensive items this week at both Ukrop’s and MARTIN’S.  I am hoping to get match-ups done for both stores this week.  Check back to see if I accomplish this goal.  :)

My first MARTIN’S trip…..

I went to MARTIN’S this morning, and blame it on the pregnancy hormones (they get blamed for everything else).  I was actually a little teary eyed driving over to Short Pump.  I guess it is because when I was a “young” Ukrop’s pharmacist and working full-time (up until Natalie was born) the Short Pump store was “my store”.

One of the reasons I was heading over there besides the fact that I figured I need to check it out, was because Natalie started complaining about her ear hurting last night.  This is very uncharacteristic for her.  The short version of the story is that we ended up at KidMed again last night.  It was really busy in there last night and we didn’t get out of there until after 9:30.  The doctor offered to give her a dose of antibiotic tonight so that we could get it started.  I thought that was a brilliant idea and it saved us another stop.  I knew about MARTIN’S free antibiotic program (up to a 14 day supply).  When I got home I checked the list on their website and sure enough the amoxicillin that Natalie was prescribed was on the list.  They also have a $4 for 30 day supplies and $10 for 90 day supplies of generic maintenance medications.  Check out the above link if you are interested. 

So what did I think of MARTIN’S?  Obviously I was “negative scanning” and I found something right off – all of the shopping carts are outside the door.  Sure they are nice and shiny right now because they are new – but what are they going to be like after a few months or years?  I also think about in the winter how cold they will feel to little tushies that get to sit in them. 

I did see a price scanner at the end of an aisle and took advantage of it to verify a price for the yogurt I was buying.

The store was clean and bright, but I felt like it was crowded.  Not people wise, but the aisle felt smaller and the merchandise seemed to be very close to each other.  That is why I was happy to see the price scanner because there were several different types of yogurt with several different prices and I could discern which one I had picked up.  I don’t care for all of the “shelf-talkers” they have on each aisle.  They have lots of these sitting perpendicular with the shelf as opposed to flat against it.  I felt like it was visually overwhelming and added to my feeling of being crowded. 

It was nice to know that they double coupons everyday, but I am still upset about them only doubling one like coupon per customer per day.

I did also verify by buying 2 pounds of strawberries that were buy one get one free and it does look like you have to get both, as opposed to being able to buy one at “half price”. 

I don’t care for their receipt lay-out.  It is one of the things that drives me crazy about Kroger also.  It doesn’t group your items together by departments such as produce, bakery, dairy, etc. 

I know that I will have to learn to accept these things.  I tried to justify and say that I hadn’t shopped in the Short Pump store on a regular basis in quite awhile so I just wasn’t familiar with the way it was laid out.  I am not counting them out.  I probably will continue to do my primary shopping there for years to come.  I will just have to learn to accept the changes.

Making Tortillas

I haven’t been doing a great job in the last week with menu planning, I blame it on going on a mini-vacation last week.  So, Tuesday night when Steve had to go to a dinner for work and I was home alone with the girls I ordered pizza.  I was going to have us eat leftover pizza Wednesday night so that we didn’t have to clean-up too much before going to church.  Then, Steve told me that he has to go out to dinner Thursday night with some co-workers in town from Europe.  I decided to keep the pizza for Thursday night.  That left me with the 4 o’clock dilemma of what to have for dinner.

I decided we could have tacos or burritos.  I have about 5 pounds of ground beef in my refrigerator that Steve picked up for me Monday night at Ukrop’s as part of the Monday only deal.  This would be an easy and quick dinner.  I looked in the pantry and realized that I was out of tortillas.  So, when you decide you want something and still have about 2 hours before dinner and don’t want to take 2 kids to the store for one item what do you do?  You find a recipe and make it yourself.  I found this recipe at allrecipes.com and decided to give it a try.  I figured the worse case scenario would be I would ask Steve to stop and pick some up on his way home.  They turned out really good, were easy, and inexpensive to make.   I don’t know if I will go back to buying flour tortillas again.  The girls also had fun helping me make them.

They didn’t require any oil to cook them in and I kept them warm on an oven-safe plate with the oven turned on to 110 degrees.  I hope if you give them a try you won’t be disappointed.

Ukrop’s Match-ups 4/12-4/17 and Double Coupon Wednesday

Well, once again I am going to say how sad I am that the Ukrop’s era is coming to an end.  I realize that it is just a grocery store and there are far more important issues in the world beyond where I can buy my groceries and use my coupons.  I have LOTS to be thankful for and I am not go to share that right now, the list would be longer than one of my famous spreadsheets.  :)

The advertised deals are starting to fade, it doesn’t seem as if there are as many.  I have heard of lots of deals people are finding at the stores.  I have found that these deals really do vary by store.  You may notice lots of signs that either say “This Store Only” or “TSO”.  If you have the time, walk the aisles and see what is marked down.  I have seen things like Food Club Jellied Cranberries and Food Club Olives for $0.25 a can.  I have noticed that select Sauer’s spices are marked down.  (If you still have the $0.50 off one Sauer’s Spice or Extract coupon from the 3/28 SS you could get a really good deal.)  Feel free to share any deals that you find and if you could where you found it, because it really does vary by store. 

There are some decent weekly deals that don’t have coupons available like the Fieldale Value Pack Bone-in Split Chicken Breast for $0.98/lb, and the Smithfield Fresh Pork Picnic Shoulder for $1.28/lb. 

Here are some guidelines for using coupons at Ukrop’s:

  • Ukrop’s will double manufacturer coupons up to $0.99 on Wednesdays only.

  • Ukrop’s will not double more than 5 like coupons per transaction.

  • Ukrop’s does accept internet printable (IP) coupons up to a face value of $2.  They do not accept IP coupons for a free item.  This includes buy 1 get 1 free.
